Course Description

Baking Skills Level 4 – Course Overview (Uwezo College)

The Baking Skills Level 4 course at Uwezo College is a competency-based training program accredited by TVET-CDACC, designed to equip learners with the practical skills and knowledge required to produce a wide range of bakery products. This program is ideal for individuals aiming to advance their skills in both traditional and modern baking techniques, whether for employment or entrepreneurship.

The course is structured into two modules, each focusing on essential areas of professional baking:

  • Module 1 includes:

    • Cake Making – covering various types of cakes, mixing techniques, baking methods, and preparation standards.

    • Bread Making – focusing on dough handling, fermentation, shaping, baking, and product evaluation.

    • Cake Icing – introducing the application of icing techniques for professional presentation and finishing.

  • Module 2 features:

    • Yeast Products – training in the preparation of items such as doughnuts, rolls, and buns using different fermentation methods.

    • Pastries – covering shortcrust, puff, and choux pastry techniques for savory and sweet products.

    • Cake Decoration – enhancing learners’ creativity and precision in decorating cakes for various occasions using fondant, piping, and sculpting techniques.

After completing all coursework, trainees are required to undertake a 320-hour industrial attachment in a bakery or hospitality setting. This practical experience bridges the gap between classroom learning and real-world application.

Graduates of this course are prepared for careers in commercial bakeries, hotels, cake shops, catering services, or to start their own baking enterprises.
