Food and Beverage Production (Cookery) Level 3 – Course Overview (Uwezo College)
The Food and Beverage Production Level 3 course at Uwezo College, accredited by TVET-CDACC, is a hands-on training program designed to equip learners with fundamental cookery skills for professional kitchen settings. This competency-based qualification prepares trainees to produce a wide variety of meals with a focus on hygiene, presentation, and quality.
The curriculum covers three core units:

Starters and Accompaniments Preparation – teaching the preparation of soups, salads, sauces, and side dishes to complement main meals.

Main Meal Preparation – focusing on cooking techniques, meal composition, and preparation of meat, poultry, fish, and vegetarian dishes.

Desserts Preparation – equipping learners with the skills to create baked, frozen, and cold desserts, with attention to flavor and aesthetic appeal.
Training is delivered through practical sessions in a fully equipped kitchen, giving students direct experience with tools, ingredients, and cooking methods. Emphasis is placed on food safety, time management, portion control, and presentation techniques.
Upon completion of classroom training, learners are required to undertake a 240-hour industrial attachment in a hotel, restaurant, or catering facility. This experience exposes them to real kitchen environments and helps bridge the gap between theory and practice.
This course is ideal for aspiring chefs, school leavers, or anyone passionate about food preparation. Graduates are ready for roles in restaurants, catering services, hotels, or to start their own food business.
