Food and Beverage Production (Cookery) Level 4 – Course Overview (Uwezo College)

The Food and Beverage Production (Cookery) Level 4 course at Uwezo College is a practical, competency-based program accredited by TVET-CDACC, aimed at training learners for professional roles in the culinary and hospitality industry. This program is ideal for aspiring chefs and kitchen professionals looking to gain advanced culinary techniques and knowledge applicable in commercial kitchens, restaurants, hotels, and catering services.

The course is divided into two comprehensive modules, each focusing on essential food production areas:

  • Module 1 includes:

    • Starters and Starter Accompaniments Preparation – covering a variety of soups, salads, and appetizers, along with appropriate garnishes and accompaniments.

    • Main Meal Preparation – focusing on protein and starch dishes, including poultry, beef, fish, vegetarian options, and their accompaniments.

    • Desserts Preparation – teaching the production of both hot and cold desserts, baked items, and plated dessert presentation.

  • Module 2 covers:

    • Pastries Preparation – involving shortcrust, puff, choux, and sweet pastries used in savory and dessert dishes.

    • Specialty Dishes Preparation – training learners to create regional and international cuisine with artistic presentation and advanced cooking techniques.

To reinforce practical skills, learners must complete a 320-hour industrial attachment in a professional food production environment, gaining valuable on-the-job experience.

Graduates of this course are qualified for positions such as commis chefs, line cooks, pastry assistants, or can venture into catering and food entrepreneurship.
